I’ve been a customer here since it opened. Back in the day the managers ran a tight ship. Excellent service & a high standard for food. I’ve seen it go downhill for a while. Today the food was much better (still overpriced for a single simple roll) the rice freshly made, beautiful presentation. Not a tight roll, so falls to pieces when picked up. The wait staff was lacking. On their phones, not delivering food when it was clearly waiting. Refills were something we had to flag them down to get. He rushed to put down the ticket. The lack of ventilation had me coughing. What the heck are they burning? The music is way too loud & wacky. Once upon a time it was more authentic & relaxing.

Ichiban is one of the best sushi places in Pensacola. I’ve been to several different sushi places in Pensacola such as: Sake Cafe, Wako, Dharma Blue, Tony’s Asian Market. When we were first seated, our server Maverick offered us complimentary warm towels for our hands. That was a nice surprise. No other sushi places I’ve been to anywhere have offered that. I’m very impressed by how fast the sushi came out. I ordered a total of nine rolls and it probably came out in 15-20minutes, all at once and exactly like I ordered. I’ve been to places like Sake Cafe and they were quick but maybe it was 15-20min for the first four rolls and another 15-20min for the next five rolls. Which is not bad for the amount of rolls ordered, but I’m even more impressed that Ichiban is somehow faster and got everything correct. Dont get me started on Dharma Blue. Almost 1hr for 3-4 rolls. Sometimes restaurants will do one thing right at the cost of another thing. Like maybe the order will come out quick but then it’s wrong. That is not the case with Ichiban. Such a great restaurant experience. The food was fresh, flavorful, and came out hot. The atmosphere was nice, the service was friendly, and everything we ordered was delicious. You can really tell they care about quality. Definitely a place I’d come back to again!

I love this place, I often come here on Wednesdays for a solo lunch but I will never come back. They don't stop playing Taylor Swift (5 songs on a row) and Adele and Ed Sheeran SO LOUD. Please turn it down. I took my three sushi rolls to go because it was so awful and LOUD. My boyfriend couldnt even hear me on the phone. Food is really good though 😂

Strong in the flavor, this place is. 🍣 From the first bite to the last, the food delivers—fresh, well-prepared, and full of flavor. The sushi was clean and balanced, the fried appetizers crispy without being heavy… and the crab Rangoon? Fantastic. Perfectly crisp with a rich, creamy filling that stands out. Service? Excellent, it was. Attentive without hovering, friendly without feeling forced. The kind of waitstaff that makes the whole experience smoother without you even realizing it. The space itself has a relaxed, traditional feel—comfortable and easy to settle into while you enjoy the meal. When good food and great service align, a place worth returning to, this becomes.
